The Best Johnny Cakes Recipe

Johnny Cakes are cast-iron skillet-fried yellow cornmeal cakes. Butter and maple syrup make a simple breakfast that goes with any protein!  

– 1 cup all-purpose flour (120g) – ▢1 cup cornmeal (120g) – ▢2 tablespoons granulated sugar – ▢1 teaspoon salt – ▢¾ cup milk (180mL) – ▢¼ cup water (60mL) – ▢¼ cup unsalted butter melted (57g) – ▢2 large egg – ▢2 tablespoons vegetable oil butter, or bacon fat, for frying


Mix the cornmeal, sugar, salt, and flour together in a medium-sized bowl using a whisk. 

Step 1


Mix the milk, water, melted butter, and eggs in a small bowl with an electric mixer. Mix the milk mixture with the flour mixture and stir it in until it's all mixed together.  

Step 2

In a large cast-iron or nonstick pan set over medium heat, heat 2 tablespoons of oil, butter, or bacon fat.   

Step 3

In small groups, add 1/4 cup of batter at a time to the hot pan and cook until the edges turn golden brown.   

Step 4

Turn it over and cook it until the other side is golden brown. Add butter and maple syrup and serve hot.
