The Best Gingerbread Pancakes Recipe

Christmas flavours permeate this Gingerbread Pancake recipe. Christmas morning breakfast lovers will love this seasonal twist.  

– 2 cups all-purpose flour (240g) – ▢2 teaspoons baking powder – ▢¼ teaspoon baking soda – ▢1 teaspoon salt – ▢2 teaspoons ground ginger – ▢2 teaspoons ground cinnamon – ▢½ teaspoon ground clove – ▢1¼ cup whole milk (300ml) – ▢2 large egg – ▢⅓ cup unsulphured molasses (80ml) – ▢4 tablespoons unsalted butter melted (56g)


Mix flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves in a large basin.  

Step 1


Mix the milk, eggs, molasses, and melted butter in a separate basin. Add wet ingredients to dry and stir until just mixed. (Some bumps are fine.)  

Step 2

Heat a griddle or nonstick skillet on medium. Grease lightly with butter. In batches, place ¼ to ⅓ cup of batter per pancake into the skillet and cook until bubbles form on top and bottom is golden brown, 2 to 3 minutes.   

Step 3

Pancakes should be flipped and cooked for 2 minutes until golden. Continue buttering the pan between batches. You can serve heated pancakes with butter and maple syrup.
