For the Fritters: – ▢Vegetable oil for frying – ▢1½ cups all-purpose flour (180g) – ▢3 tablespoons granulated sugar – ▢2½ teaspoons baking powder – ▢1 teaspoon salt – ▢½ teaspoon ground cinnamon – ▢¾ cup whole milk (180mL) – ▢2 large egg – ▢2 teaspoons vanilla extract – ▢2 large apples (about 1 pound/450g), peeled cored, and diced (Granny Smith apples, Honeycrisp apples) For the Glaze: – ▢2 cups powdered sugar (240g) – ▢3 to 4 tablespoons whole milk – ▢½ teaspoon vanilla extract

For Fritters: Add 1½ inches of vegetable oil to a big pot or Dutch oven. Use a candy or deep fry thermometer and heat on medium high. Heat oil to 350°F. Adjust temperature as needed.

Step 1

Put a wire rack on top of paper towels on a large rimmed baking sheet. Make batter while oil heats. Mix flour, sugar, baking powder, salt, and cinnamon in a large bowl.

Step 2

Milk, eggs, and vanilla should be combined in a medium bowl. Add to dry mix. Using a spatula, fold the ingredients until few flour streaks remain. Coat apples and add flour.

Step 3

Once oil is hot, add ¼ cup of batter per fritter. Try frying 4–6 fritters at once. Fry till bottom is golden brown, 2 minutes. Flip and cook 2 minutes until other side is golden brown.

Step 4

Transfer fritters to wire rack with slotted spoon and cook until batter is gone.

Step 5

For Glaze: Mix powdered sugar, 3 tablespoons milk, and vanilla in a medium bowl.

Step 6

Thin glaze with milk if needed. Pour glaze over heated fritters or dip them in it and arrange them on a wire rack. Let the fritter sit for 10 minutes to harden the glaze before serving.
