Super Easy Gingerbread Muffins Recipe

Gingerbread Muffins make a delicious dessert, brunch, or winter treat! They're delicious and cakey with warming spices and buttery flavour.  

– 2¼ cups all-purpose flour (270g) – ▢1½ teaspoon baking powder – ▢½ teaspoon baking soda – ▢½ teaspoon salt – ▢1 teaspoon ground cinnamon – ▢1 teaspoon ground ginger – ▢¼ teaspoon ground clove – ▢⅔ cup packed light or dark brown sugar (147g) – ▢½ cup whole milk room temperature (120ml) – ▢½ cup unsalted butter melted (113g) – ▢½ cup unsulphured molasses (120ml) – ▢2 large egg – ▢2 teaspoons vanilla extract – ▢Coarse sugar or sparkling sugar for garnish (optional)


Heat the oven to 425°F. Paper-line a 12-cup muffin pan. Whisk flour, baking powder, baking soda, salt, and spices in a large bowl until mixed.

Mix brown sugar, milk, butter, molasses, eggs, and vanilla in a medium bowl until smooth. Add wet ingredients to dry and whisk just until incorporated.

Fill paper liners three-quarters full with batter. If desired, sprinkle coarse sugar on top.  

Step 3

Bake 5 minutes. Reduce the oven temperature to 375°F (do not open the oven or remove the muffins) and bake for 15–18 minutes until a wooden pick inserted in the centre comes out clean.   

Step 4

Cool the muffins in the pan for a few minutes, then transfer to a wire rack to finish cooling.
