Quick and Easy Scones Recipe

– 2½ cups all-purpose flour (300g) – ▢¼ cup granulated sugar – ▢2½ teaspoons baking powder – ▢½ teaspoon salt – ▢⅓ cup cold unsalted butter cubed (76g) – ▢½ cup mix-ins dried currants or cranberries, chocolate chips, berries, nuts (optional) – ▢¾ cup plus 1 tablespoon heavy cream divided (195mL) – ▢1 large egg – ▢1 teaspoon vanilla extract – ▢1 tablespoon coarse sugar


Preheat oven to 400F. Baking sheet parchment. Stir flour, granulated sugar, baking powder, and salt in a large bowl.   

Step 1


Cut cooled butter into pea-sized pieces with a pastry cutter or fork. If used, add ½ cup of desired mix-ins.  

Step 2

Mix ¾ cup heavy cream, egg, and vanilla in a small bowl. Add cream mixture slowly with a fork until shaggy dough forms.   

Step 3

Press dough into a ¾-inch square on a lightly floured surface. Cut dough in half. Stack and push each part again. Make a 7-inch or ¾-inch thick dough disc.   

Step 4

Cut the disc into 8 triangles with a floured knife and place them 2 inches apart on the baking sheet.  

Step 5

Sprinkle coarse sugar on scones and brush with remaining 1 tablespoon heavy cream. Frost 15 minutes to solidify.  

Step 6

Bake 10–12 minutes, flipping halfway, until puffed and faintly golden. Serve after 10 minutes of chilling. Scones can be stored in an airtight jar at room temperature for 4 days.
