Healthy Eggs Benedict Recipe

Find out how to make eggs Benedict at home here. My basic eggs benedict recipe takes 30 minutes and 10 ingredients, making it the perfect leisurely weekend meal without special events.  

– ¼ cup unsalted butter (56g) – 4 egg yolk – 1 tablespoon lemon juice – ¼ teaspoon salt – ⅛ teaspoon cayenne pepper or paprika – ⅛ teaspoon ground black pepper – ¼ teaspoon vinegar – 4 large egg – 2 English muffins (114g) – 8 slices Canadian bacon (136g) – Chopped chives for garnish


Melting butter in a small pot over medium heat. Mix egg yolks in a 2-cup glass measuring cup or small bowl till pale yellow.   

Step 1


Add lemon juice, cayenne, and black pepper. Add warm butter slowly to egg mixture and whisk vigorously until thickened, about 1 minute. Set aside.  

Step 2

Fill a medium saucepan with 3" water. Simmer after boiling on high. Stir in vinegar. Crack one egg into a small cup.  

Step 3

Submerge the cup in water and gently remove the egg. Egg poaching takes 3–5 minutes, depending on doneness.   

Step 4

A longer cook time firms the white and reduces the yolk. With a slotted spoon, gently place the egg on a plate. Repeat with remaining eggs. Poach two eggs at once, pan size depends.  

Step 5

Toast English muffin halves while eggs cook. Heat a large skillet on medium-high. Heat Candian bacon for 2 minutes per side.  

Step 6

Put two bacon slices on each muffin half. Add poached egg to bacon. Top with Hollandaise. Add chives and cayenne or paprika and serve immediately.
