Healthy Cinnamon Muffins Recipe

Eat cinnamon muffins for breakfast and midday snacks! These are light, moist, and fluffy. With coffee, they make a cosy fall treat.  

For the Muffins: – ▢2 cups all-purpose flour (240g) – ▢¾ cup granulated sugar (150g) – ▢2 teaspoons baking powder – ▢2 teaspoons ground cinnamon – ▢¾ teaspoon salt – ▢¼ teaspoon ground nutmeg – ▢¾ cup milk (180mL) – ▢5 tablespoons unsalted butter melted (83g) – ▢2 large egg – ▢1 teaspoon vanilla extract For the Cinnamon Sugar Topping: – ▢⅓ cup granulated sugar (75g) – ▢1 teaspoon ground cinnamon – ▢3 tablespoons unsalted butter melted


For Muffins: Heat the oven to 350°F. Spray a non-stick muffin pan.  

Step 1


Mix flour, sugar, baking powder, cinnamon, salt, and nutmeg in a large bowl. Mix milk, butter, eggs, and vanilla in a small bowl. Stir milk mixture into flour mixture until just mixed.  

Step 2

Fill muffin cups two-thirds full with batter. Bake muffins for 20 minutes until a wooden pick inserted into the centre comes out clean.  

Step 3

Top with cinnamon sugar: In a small bowl, mix sugar and cinnamon. Butter the muffin tops and coat them in cinnamon sugar. Cool on a wire rack.
