Healthy Baked Oatmeal Recipe

Easy Baked Muesli with cinnamon and brown sugar is a tasty breakfast for everyday or special occasions. Mix in fresh or frozen fruit or other sweets!  

– 1½ cups whole milk (360ml) – ▢½ cup unsweetened applesauce (140g) – ▢⅓ cup packed light brown sugar (or maple syrup) (73g/80ml) – ▢2 large egg – ▢4 tablespoons unsalted butter melted (56g) – ▢2 teaspoons vanilla extract – ▢1 teaspoon ground cinnamon – ▢3 cups old-fashioned rolled oats (336g) – ▢1 teaspoon baking powder – ▢½ teaspoon salt Optional mix-ins: – ▢1 to 1½ cups fresh or frozen blueberrie


Heat the oven to 350°F. Lightly oil a 9x9-inch baking dish with butter or nonstick spray.  

Step 1

Mix milk, applesauce, brown sugar, eggs, melted butter, vanilla, and cinnamon in a large bowl. Stir in the oats, baking powder, and salt to coat. Mix-ins are welcome.  

Step 2

If desired, sprinkle more nuts or fruit over the mixture in the pan. Bake until the top is golden brown and the centre is almost set, 40 minutes. Cook muesli for 5–10 minutes longer for drier, firmer muesli.  

Step 3

Slice and serve muesli after 10 minutes of cooling. If desired, add yoghurt and berries or nuts.
