Easy Gingerbread Waffles Recipe

Crispy Gingerbread Waffles are the right mix of sweet and spicy. These Christmas brunch recipes are quick and ready in under 20 minutes!  

– 2½ cups all-purpose flour (300g) – ▢2 teaspoons baking powder – ▢¼ teaspoon baking soda – ▢1¼ teaspoons salt – ▢2½ teaspoons ground ginger – ▢2 teaspoons ground cinnamon – ▢½ teaspoon ground clove – ▢¼ teaspoon ground nutmeg – ▢1½ cups whole milk room temperature (360ml) – ▢½ cup unsalted butter melted (113g) – ▢⅓ cup unsulphured molasses (80ml) – ▢2 large eggs room temperature – ▢2 tablespoons packed dark brown sugar


Heat a waffle iron. Mix flour, baking powder, baking soda, salt, and spices in a large bowl.  

Step 1

Mix the milk, melted butter, molasses, eggs, and brown sugar in a separate basin. Mix the wet and dry ingredients until just mixed.  

Step 2

Use more melted butter or cooking spray to grease the hot waffle iron. Place ½ cup of batter in the waffle iron centre. Adjust the quantity according on your waffle machine size.  

Step 3

Cook the waffle for 3–5 minutes or until golden brown and crispy, depending on your waffle maker. Waffles stay crispy on a wire rack.   

Step 4

Optional: keep them warm in a 250°F oven while making the other waffles. Serve hot with maple syrup and butter.
