Easy Banana Pancakes Recipe

Fruity, fluffy The perfect breakfast or brunch comfort food is banana pancakes. Ripe bananas and basic groceries make this recipe great every time. The maple syrup and banana slices make this dinner family-friendly.  

– 1 cup all-purpose flour (120g) – ▢2 tablespoons granulated sugar – ▢2½ teaspoons baking powder – ▢½ teaspoon salt – ▢2 very ripe bananas peeled – ▢1 cup whole milk (240ml) – ▢1 large egg – ▢3 tablespoons unsalted butter melted, plus more for the pan – ▢1 teaspoon vanilla extract


Mix the flour, sugar, baking powder, and salt in a large bowl and set aside. Mash bananas in a separate bowl, leaving pieces for texture. Add milk, egg, melted butter, and vanilla.  

Step 1

Stir the wet mixture into the dry ingredients until just mixed. (some bumps are fine) Heat a big pan or griddle on medium. More butter or vegetable oil will lightly grease.   

Step 2

Cook pancakes in batches, adding ¼ cup of batter per pancake, until golden brown and bubbles form on top, 2 to 3 minutes. Flip and cook another minute until bottom is golden brown.  

Step 3

Keep making pancakes, adding butter to the griddle between batches. Serve heated pancakes with banana slices, maple syrup, and butter.
