– 1 Pie Crust Recipe – ▢4 large egg – ▢¾ cup heavy cream (180mL) – ▢¾ teaspoon salt – ▢¼ teaspoon ground black pepper – ▢¾ cup desired filling – ▢¼ cup desired cheese Fillings and Cheese: – ▢Cooked spinach – ▢Diced red bell pepper – ▢Diced ham – ▢Diced mushroom – ▢Finely chopped onion – ▢Cooked and crumbled bacon – ▢Shredded swiss cheese – ▢Crumbled feta cheese

Place racks in the top and lower oven thirds. Heat the oven to 375°F. Lightly grease 2 24-cup mini muffin pans.

Step 1

Roll each pie crust disc to 1/8-inch thickness on a gently floured surface. Cut 48 circles with a 2 1/2-inch round cookie cutter, rerolling leftovers.

Step 2

Line each well in the prepared pans with a dough round, pressing it into the bottom and up the sides. Refrigerate uncovered for 15 minutes until firm.

Step 3

Whisk eggs, cream, salt, and pepper in a large measuring cup until mixed. Fill cold pie crusts two-thirds full with egg mixture (1 1/2 teaspoons each crust). Sprinkle cheese over crusts with contents.

Step 4

Bake one pan on each oven rack for 25–30 minutes, switching pans halfway through, until the filling is set and the crust is golden brown.

Step 5

Let cool in pans for 5 minutes on wire racks. Remove tiny quiche from pans. Serve warm or room temperature. An airtight container may store baked quiche for 5 days or freeze it for 3 months.
