Delicious Egg Muffins Recipe

Feta cheese and colourful vegetables make loaded egg muffins delicious. For busy mornings, try this meal prep breakfast recipe.  

– 10 large egg – ▢⅓ cup half and half (79mL) – ▢1 teaspoon salt – ▢½ teaspoon ground black pepper – ▢1 cup baby spinach chopped (20g) – ▢½ cup diced red bell pepper (74g) – ▢¼ cup diced onion (37g) – ▢4 oz feta crumbled (112g)


Warm the oven up to 350°F. Use baking spray or butter to grease a 12-cup muffin pan.  

Step 1

Mix the eggs, half-and-half, salt, and black pepper in a medium-sized bowl with a whisk. Add half of the cheese, the bell pepper, the onion, and the spinach.  

Step 2

Fill each muffin cup with an equal amount of the batter. Add the rest of the cheese to the tops.  

Step 3

Bake eggs for 25 minutes until set. Serve right away or refrigerate in an airtight jar for 5 days.
